Twenty years ago, I went on a mission. Frustrated by the quality of pineapple tarts that my husband would buy at the local Caribbean stores, I was determined to recreate the delicious tarts I remembered devouring back home in Guyana. With no formal background in baking, I ventured off to research the science and art of producing a soft, flaky and crumbly pastry dough using all natural ingredients, and an authentic pineapple jam. On my first try, to my amazement, my family and friends thought I created a masterpiece!
I was instantly encouraged to start a business. I knew I was onto something special, but I also realized that starting a business would require my full attention, and my focus at the time was raising my two young sons. However, the dream to start my own business stayed with me.
In 2016, my boys now grown, the timing was perfect to launch Lily’s Pastry. Right from the start, I was able to get my pineapple tarts on the shelves of one of Canada’s major grocery stores. The sweet and tangy pineapple jam, made from fresh pineapples, covered with a thin layer of soft, crumbly yet flaky pastry was very quick to create much excitement, not just within the Guyanese population, who were overjoyed to finally have access to this delicacy in mainstream grocery stores, but also enticed the taste buds of Canadians from many different cultures. Today, Lily’s Pastry products – all dairy-free and containing no artificial colours or flavours – are baked with care at our facility in Brampton, and enjoyed by thousands of customers across the GTA.
